Holiday Rollout Sugar Cookies by Bella Gluten-Free
1 cup (2 sticks) butter or butter alternative
1 3/4 cup sugar (I like to use evaporated cane juice)
2 eggs or egg alternative (see package for substitution)
1 tsp vanilla extract
2 1/8 cups Bella Gluten-Free All Purpose Baking Mix
1 tsp baking powder
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or lightly grease.
In a large bowl, mix butter and sugar for until soft and blended. Add eggs, extract and stir until combined. Add Bella Gluten-Free All Purpose Baking Mix and baking powder and mix until well incorporated.
Roll Dough into ball, wrap in wax or parchment paper and refrigerate for 30-45 minutes. Remove chilled dough and cut off only the amount you are working with. Return remainder of dough to the refrigerator. Between two pieces of parchment paper, roll dough to 1/4" thick, dusting the dough with a little Bella Gluten-Free All Purpose Baking Mix if it begins to stick. Dip cutters in All Purpose if needed and cut out shapes. Transfer to baking sheet with a spatula.
Bake for 12-15 minutes or until a light golden brown. Let cool on baking sheet for 5 minutes before removing. Cool completely before decorating.
