Cauliflower Fritter Recipe by Bella Gluten-Free
You can substitute just about any hardy vegetable: broccoli, brussel sprouts, or squash. Just make sure to served them with a spiced yogurt sauce.
Servings: Makes 14-16 small fritters • Prep: 15 mins • Total: 30 min
1/2 head fresh cauliflower
2 large eggs
2 TBL sweet or yellow onion, minced
2 cloves garlic, minced
1/4 tsp sea salt
1/8 tsp ground black pepper
1/4 tsp paprika
1/4 tsp cinnamon
1/8 tsp cayenne pepper
1 TBL fresh parsley, chopped
3 TBL veggie oil, coconut oil or Spectrum Organic Margarine
Ingredients: Yogurt Sauce
1/2 cup plan yogurt
1 tsp fresh parsley, chopped
1 tsp lemon zest
1 TBL lemon juice
salt and pepper to taste

Break up cauliflower into florets and add to a medium sauce pan. Cover with water. Bring to boil for about 12-15 minutes or until florets are easily pierced with a fork. Remove from heat and drain.
In a medium bowl, whisk together Bella Gluten Free All Purpose Baking Mix ,eggs. and seasonings. Batter will be thick. Chop cauliflower finely and add to batter. Mix throughly mashing cauliflower into the batter.
Heat veggie oil in sauté pan until hot and slightly smoking. Add 1 heaping TBL of batter to pan. Repeat until pan is full but not overcrowded. Fry until golden brown (adjusting heat as you go to allow fritter to cook through without browning too quickly) about 3 minutes a side. Transfer to platter and serve with yogurt sauce. Garnish with parsley and lemon wedges if desired.
