Stuffed Meatloaf Recipe by Bella Gluten Free

Here's an easy to make stuffed meatloaf that is comfort food at its best.

Servings: Makes 6-8 servings.  •   Prep: 15 mins  • Total: 45 mins

Ingredients

1 Bella Gluten Free Dinner Rolls grated into breadcrumbs ( about 1/2 cup)

¼ cup parmesan cheese, grated

1 lb ground beef, turkey or buffalo  

1/4 cup onion, chopped

1 clove garlic, minced

1/2 tsp sea salt 

1/4 black pepper, ground

1 TBL fresh herbs such as parsley, basil. thyme or a combination (1/2 TBL if using dry)

1 egg 

Add to top of meatloaf:

1 tsp olive oil

1/2 tsp balsamic vinegar

Stuffing:

1 Bella Gluten Free Dinner Rolls grated into breadcrumbs ( about 1/2 cup)

1 large tomato, sliced

1 tsp Oilve Oil

salt and pepper to taste

Directions:

Mix It Up

 

Preheat oven to 400 degrees.

• In a medium bowl, add all ingredients except oil and vinager. Mix together until completely combined.

• In another bowl, toss tomatoes or veggie of choice with oil, salt and pepper.

 • Add filling to bottom of the prepared dish lining it up in the shape a meatloaf.

• Wrap the meatloaf mixture over the filling. Sprinkle the top with oil and vinegar. 

• Bake in over for 30-40 minutes until desired temperature is reached. Serve over a side of potatoes rice or polenta.
