Nest Egg Macaroon Recipe by Bella Gluten Free

Add chocolate chips for the center to help hold the candy eggs.

Servings: Makes 18-24 servings.  •   Prep: 15 mins  • Total: 35 mins

Ingredients:

2 1/12 cups sweetened shredded coconut, firmly packed

2/3 cup sugar, grandulated

1/4 cup Bella Gluten Free All Purpose Baking Mix

4 large egg whites 

1 tsp vanilla extract

1 tsp almond extract

1 cup slivered almonds (optional)

semi sweet or white chocolate chips

dash of salt

Cadbury eggs or gf jelly beans for decorating.

Directions:

Mix It Up

Preheat oven to 350 degrees. Prepare 2 baking sheets with parchment paper or lightly spray.

• In a medium bowl, mix dry ingredients. coconute, Bella Gluten Free All Purpose Baking Mix, and salt. 

• Add egg whites , extracts and blend until incorporated.Dough will be sticky.

 • Stir in almonds.  Roll by hand into 2" ball shapes and place on line baking sheet. Press thrumb into center of cookie creating a nest shape. Add 1-3 chocolate chips to the center.

• Bake in over for 20-25 minutes. Add Cadbury eggs or gluten- free jelly beans to center of cookie while still warm. Let cool before serving.
