Classic Blueberry with a Coconut Twist by Bella Gluten-Free      

The fresh taste of warm blueberry muffins with the heartiness of coconut is a dynamic duo in this batch of muffins!

Ingredients:

1 3/4 cups BFG All Purpose Baking Mix

2 tsp baking powder

2 eggs

¾ cup coconut sugar or sugar of choice

½ cup coconut milk or milk/alternative

½ cup vegetable oil

1 tsp vanilla

1 cup fresh blueberries

¼ cup coconut sweetened flakes  (optional)

 

 

Prep time: 15 minutes

Directions:

Preheat oven to  350 degrees. Line 12 muffin tins with papers or lightly grease.

In a medium bowl, whisk together dry ingredients.

With hand mixer, beat eggs and sugar together until fluffy, about 3 minutes. Add coconut milk, oil and vanilla and mix.

Add dry ingredients and mix just until combined. Fold in blueberries and coconut gently. 

Fill muffin tins ½ -3/4 full. Bake for 18-20 minutes or until center is set.
